氣炸琵琶豆腐

材料 [按下圖片放大]



2 tbsp 蘑菇粒 (或改用冬菇)

1 雞蛋

2條 臘腸,切粒 [fig1]

200g 硬豆腐

300g 鯪魚滑 [fig2]

150g 中筋麵粉 [fig3]

其他建議

2tbsp 蝦米粒 [fig3](浸泡)

2tbsp 唐芹粒
2 tbsp 蔥粒

醃料

1 tsp 雞粉 [fig5]

0.5 tsp 蒜粉 [fig6]

0.5 tsp 砂糖

1 tsp 鹽

3 tbsp 粟粉 [fig7]

汁料

2 tsp 蠔油 [fig8]

0.5 tsp 麻油 [fig9]

1 tsp 砂糖

1 tbsp 蘑菇粒

100ml 水

粟粉水

2 tbsp 水

烹調時間:
- 氣炸鍋(豆腐要塗上油):攝氏180度 9分鐘 》反轉 》攝氏190 度 6分鐘
- 焗爐(豆腐要塗上油):攝氏200度 8分鐘 反轉 》攝氏220 度 8分鐘
- 油炸:攝氏180度油溫炸6分鐘 》拿起 》攝氏190度油溫炸2分鐘
做法:
1. 豆腐切粒,加入0.5 tsp鹽,醃15分鐘讓它出水
2. 將所有材料(除了麵粉)和醃料混合好,再將豆腐握成餃子形狀,用麵粉包好
3. 豆腐用上述烹調方法和時間煮好
4. 汁料材料用中大火煮2分鐘,加入粟粉水勾芡
5. 琵琶豆腐上碟,沾上醬汁享用

2 tbsp diced mushroom (or soaked chinese dried mushroom)
1 large egg
2 Chinese pork sauce [fig1]
200g Firm tofu
300g Minced fish [fig2]
150g All purpose flour [fig3]

2tbsp Minced Chinese celery
2 tbsp. Diced green onion

Seasoning
1 tsp Chicken powder [fig5]
0.5 tsp Garlic powder [fig6]
0.5 tsp Sugar
1 tsp Salt
3 tbsp Cornstarch [fig7]

Sauce mixture
2 tsp Oyster sauce [fig8]
0.5 tsp Sesame oil [fig9]
1 tsp Sugar
1 tbsp Diced mushroom
100ml Water

2 tbsp water

Cooking method and timing:
- Air Fryer (coat the tofu with oil):180 Celsius 9mins 》flip the mixture 》190 Celsius 6 mins
- Oven (coat the tofu with oil):200 Celsius 8mins 》flip the mixture 》220 Celsius 8 mins
- Deep fry:Oil heat to 180 Celsius, deep fry for 6 mins 》Take out the mixture 》heat the oil to 190 Celsius and deep fry for 2mins

Steps:
1. Cut the tofu into pieces. Coat it with the 0.5 tsp salt for 15 minutes.
2. Mix all the ingredients together (except the flour). Add in the seasoning and mix it well. Shape the mixture to make it looks like dumplings. Coat the tofu mixture with the flour
3. Cook the tofu with the method and timing mentioned above
4. Cook the sauce mixture in a pan over medium high heat for 2 minutes. Thicken the sauce with the cornstarch mixture.
5. Place the tofu in plate. Serve it the sauce
