2-3碗白飯
2 隻 雞蛋,發勻
0.25 tsp 鹽
醬汁材料
1 tsp 蒜蓉
2-3 隻冬菇,浸軟洗淨/切粒
80g 雞柳,切粒(非必要)
6-8隻 鮮蝦仁
2-3粒 乾瑤柱,浸軟/撕碎
1/2 量杯 西蘭花莖,切粒 * 可以改用露筍,菜心,芥蘭
200ml 雞湯
1.5 tsp 蠔油
芡粉水
1 tbsp 粟粉
+ 2 tbsp 水
做法
1 鑊用中大火,加入1湯匙油燒熱,加入雞蛋,再加入飯炒鬆,加入鹽調味,盛起備用
2 鑊用中大火,加入1茶匙油燒熱,加入蒜蓉炒香,加入冬菇,瑤柱,西蘭花莖粒炒香
3 加入蝦仁煎至兩面轉色,加入雞湯和蠔油煮滾
4 加入芡粉水勾芡,淋上炒飯上即成

Sauce mixture ingredients
1 tsp minced garlic
2-3 shiitake mushrooms, soaked and washed/cut into pieces
80g chicken fillet, diced (only optional)
6-8 fresh shrimps
2-3 dried scallops, soaked / shredded
1/2 measuring cup broccoli stems, diced
* You replace it with asparagus, choy sum, chinese broccoli, kale
200ml chicken broth 1.5 tsp oyster sauce
Thickening
1 tbsp cornstarch
+ 2 tbsp water
Steps
1 Heat the pan over medium-high heat. Add 1 tablespoon of oil. Add beaten eggs, then add rice and stir-fry it. Add salt to taste, set aside
2 Heat the pan over medium-high heat. Add 1 teaspoon of oil. Add garlic and saute until fragrant, add mushrooms, scallops, and broccoli stems and saute for 1 min
3 Add shrimp and pan fry until golden on both sides. Add chicken broth and oyster sauce and bring to a boil
4 Add the thickening gradually to thicken the sauce. Pour the sauce on the fried rice and serve
