Group A
1- 無殼大蝦400克 (Headless & Peeled shrimps, 400g)
2- 白胡椒粉1/2茶匙(White pepper flake, 1/2 tsp)
3- 鹽1/2茶匙(Salt, 1/2 tsp)
4- 粟粉1茶匙(Corn starch, 1 tsp)
Group B
1- 沙律用即食麵包粒1杯, 非必要 (crouton, 1 cup, optional)
2- 中型蕃茄1個, 切粒 (Tomato, diced, 1 medium)
3- 甜椒1個, 去核切粒 (Bell pepper, cored, diced, 1 medium)
4- 紅蔥頭1粒, 去皮, 切片 (1 shallot, peeled, sliced)
5- 金不換葉10塊, 非必要 (Thai basil leaves, 10 pieces)
6- 中型洋蔥半個, 去皮, 切粒 (onion, peeled, diced, 1/2 of medium)
.: 汁料 Sauce Mixture :.
1- 茄汁3湯匙 (Ketchup, 3 tbsp)
2- 魚露1茶匙 (Fish sauce, 1 tsp)
3- 糖1湯匙 (Sugar, 1 tbsp)
4- 喼汁2茶匙(Worcestershire sauce, 2 tsp)
5- 熱水3湯匙 (Hot water, 3 tbsp)

Step 1:
蝦去腸, 再用2湯匙粟粉擦勻, 用清水洗淨抹乾, 再用胡椒粉和鹽醃10分鐘備用, 中快火落1湯匙油起鑊, 蝦仁和粟粉撈勻, 放入鑊煎至蝦仁變硬及轉色(約3-4分鐘), 盛起隔油備用
Remove the vein from the
shrimps. Mix it with 2 tbsp of corn starch. Then rinse the shrimps under the sink with cold water to clean it well. Dry it
and marinade it with the salt and white pepper for 15 minutes. Heat the pan with medium high heat with 1 tbsp of oil. Coat the shrimps with cornstarch. Pan fry the shrimps each side for about 2 minutes until it is hard. Put it aside.
Step 2:
鑊洗淨抹乾, 再用快火落1/2湯匙燒熱, 落蒜蓉, 紅蔥頭和洋蔥連1/2茶匙鹽炒至洋蔥軟身 (約2-3分鐘), 加入甜椒和蕃茄粒練1/2 茶匙糖兜勻, 快炒2分鐘
Clean and dry the pan well. Heat it
again with 1/2 tbsp of oil over high heat until hot. Add in the garlic,
shallot, and onion with 1/2 tsp of salt. Stir-fry the ingredients until
the onion is soft (about 2-3 minutes). Add in the bell pepper and tomato with 1/2 tsp of sugar. Mix it well and stir-fry all ingredients for 2 minutes.
Step 3:
加入汁料攪勻煮滾, 再加入蝦仁, 麵包粒和金不換, 兜勻炒1分鐘, 上碟即成
Mix in the sauce mixture and bring it to boil. Add in the cooked shrimps, crouton, and basil leaves. Mix it well and stir-fry for 1 minute. Dish it up and serve it hot.
.: 小貼士Cook's notes :.
1- 蝦用粟粉擦勻再洗, 能令蝦更白滑
2- 糖可按自己喜好加減, 建議先跟我份量試一次先
3- 煎蝦前撈粟粉, 蝦煎出來會更爽口
4- 汁料加入後要快手兜勻, 否則水份會很快揮發煮乾, 必要時自行加點熱水補救
1- Cornstarch helps to clean the shrimps better as it will stick the dirt and rinse off under water.
2- Adjust the amount of sugar according to your own preference.
3- The shrimps will be crispy if coated with the cornstarch before pan-frying it.
4- Sauce mixture will be dried out by the heat quickly. Add more hot water if it is dried out.
