4 隻 雞全脾
* 可以改用雞翼,雞槌,但烤焗時間要自行加減
60g 中筋麵粉 [fig1]
醃料
2 tsp 雞粉 [fig2]
2 tsp 鹽
1 tbsp 牛至 oregano [fig3]
2 tsp 蒜粉 [fig4]
0.25 tsp黑椒粉
2 tsp 甜紅椒粉(有煙燻味更好) [fig9]
2 tbsp 原味乳酪 [fig5]
* 或用30ml牛奶 +0.5 tsp檸檬汁代替
* 或用酸忌廉
秘製雞醬
Group A
5 粒 蒜頭1 個[60g] 洋蔥 30 ml 橄欖油 [fig6]
* 或用任何淡味的熟油(ex: 菜油,提子油)
Group B
100 ml 蘋果蓉 [fig7]
* 或用新鮮蘋果肉
0.5 tsp 鹽
0.5 tsp 辣椒粉 [非必要] [fig8]
1 tsp 牛至 oregano [fig3]
2 tsp 檸檬汁
1.5 tbsp 甜紅椒粉(有煙燻味更好) [fig9]

1. 雞全脾用醃料醃3小時甚至一天
2. Group A 雞醬材料放入鑊,用中火慢慢將洋蔥炒香(約3分鐘) 3 將炒香Group A 雞醬材料 + Group B 雞醬材料用攪拌器打至順滑,備用
4. 雞全脾用麵粉包好,放上用牛油紙包好的焗盤,雞皮向下
5 入預熱好的氣炸鍋,用180°C /356°F焗24分鐘
* 焗爐就要用210°C/410°F 焗35分鐘
6 反轉雞脾,每隻雞脾搽上1湯匙雞醬,用190°C/374°F 氣炸2分鐘
* 焗爐就要用220°C/425°F 焗5分鐘
4. 出爐後,再將雞醬慷慨地搽上即可

Marinade
2 tsp chicken powder [fig2]
2 tsp salt
1 tbsp oregano [fig3]
2 tsp garlic powder [fig4]
0.25 tsp black pepper powder
2 tsp sweet red pepper powder (smoky flavor preferred) [fig9]
2 tbsp Plain yogurt [fig5]
* Or use 30ml milk + 0.5 tsp lemon juice instead
* Or use sour cream
Secret chicken sauce mixture
Group A 5 cloves garlic
1 [60g] onion
30 ml Olive oil [fig6]
* Or use any mild cooked oil (ex: vegetable oil, raisin oil)
Group B
100 ml applesauce [fig7]
* Or use fresh apple puree
0.5 tsp salt
0.5 tsp chili powder [optional] [fig8]
1 tsp oregano [fig3]
2 tsp lemon juice
1.5 tbsp sweet red pepper powder (smoky flavor preferred) [fig9]

1. Marinate the chicken legs quarters for 3 hours or even a day 2. Put the Group A sauce mixture ingredients in a pan, pan fry ingredients over medium heat (about 3 minutes)
3 Blend the cooked Group A sauce mixture ingredients + Group B sauce mixture ingredients with a blender until smooth, set aside
4. Coat the whole chicken leg quarters with flour. Place them on the baking tray wrapped parchment paper. Make sure chicken skin on baking paper
5 Put in the preheated air fryer. Air fry at 180°C /356°F for 24 minutes
* Bake in oven for 35 minutes at 210°C/410°F
6 Turn the chicken leg quarters over. Coat 1 tablespoon of chicken sauce on each chicken leg quarter. Air fry at 190°C/374°F for 2 minutes
* Bake in oven at 220°C/425°F for 5 minutes
4. Place the chicken leg quarters on a dish. Top the chicken sauce generously. Serve it hot
