鐵板蜜糖牛柳粒,用蜜糖加魚露做醬汁,味道一絕,牛柳7成熟,非常鬆軟,再加上薯仔金黃鬆脆,味道真係一流,用鐵板上就更加吸引Video: https://youtu.be/Sq6q3DssiCU

4人份量材料 [按下圖片放大]


350g 西冷牛扒[切粒]
400g 薯仔[切粒]
1 tbsp 蒜蓉
1 tbsp 紅蔥頭粒
1 洋蔥 [切絲]

薯仔調味料1 tsp 鹽
1 tsp 油

醃料
1.5 tbsp 香茅碎
1 tsp 糖
1 tsp 蒜粉 [fig 1]
2 tsp 魚露 [fig 2]
1 tbsp 印尼甜豉油 [fig 3]
[* 可以用2 tsp 老抽 + 1tsp 糖 代替]
1 tsp 粟粉 [fig 4]

汁料
15g 牛油 [fig 5]
1 tbsp 干邑 [非必要]
1.5tbsp 蜜糖 [fig 6]
1 tsp 魚露 [fig 2]

1 牛扒用醃料醃30分鐘
2 薯仔用薯仔調味料撈勻,放入氣炸鍋,用攝氏195度焗18分鐘[或用焗爐,用攝氏200度,焗25分鐘]
3 牛扒用中大火每面煎1分鐘至5成熟,盛起備用
4 蒜蓉,紅蔥頭粒,洋蔥用中大火炒至軟身,加入焗好薯仔和牛柳粒
5 加入汁料炒勻,放上預熱好鐵板即可

350g sirloin steak [cut into pieces]
400g potato [cut into pieces]
1 tbsp minced garlic
1 tbsp shallots
1 onion [shredded]

Potato seasoning
1 tsp salt
1 tsp oil

Beef seasoning
1.5 tbsp minced lemongrass
1 tsp sugar
1 tsp garlic powder [fig 1]
2 tsp fish sauce [fig 2]
1 tbsp Indonesian sweet soy sauce [fig 3]
[* You can use 2 tsp dark soy sauce + 1 tsp sugar instead]
1 tsp cornstarch [fig 4]

Sauce mixture
15g butter [fig 5]
1 tbsp Cognac [optional]
1.5tbsp honey [fig 6]
1 tsp fish sauce [fig 2]

1 Marinade the steak with beef seasoning for 30 minutes
2 Season the potatoes with potato seasoning, Air fry them with 195°C for 18 minutes
[Or bake it in oven with 200°C for 25 minutes]
3 Fry the steak over medium-high heat for 1 minute on each side until medium done. Set it aside
4 Add in garlic, diced shallots, and onions and sautée over medium-high heat until the onion is soft. Add in baked potatoes and cooked steak
5 Add the sauce mixture and mix it well. Put on the preheated iron plate. Serve it hot
