蘋果酥皮批,用現成酥皮簡化做法,只要加上我秘製檸檬吉士醬,再鋪上大量蘋果即可,焗爐氣炸鍋都做到,金黃酥脆,味道香甜清新,啖啖蘋果肉

1-2個 紅蘋果(味道帶酸)1張 酥皮 [fig1]
*(要有至少 35cm X 25 cm,切開成6張 11cm x 11cm)
25g 牛油溶液 [fig2]
1 蛋黃

香料糖
1tsp 肉桂粉 (2.5g) [fig3]
1/4tsp 豆蔻粉(0.5g) [fig4]
2tbsp 黃糖 (25g) [fig5]

檸檬吉士醬
20ml 檸檬汁
20ml 橄欖油 [fig6]
65g 砂糖
10g 吉士粉 [fig7]
1 雞蛋
1 蛋黃

1 將檸檬吉士醬用細火煮至攝氏75度,放涼備用
2 蘋果去皮切片
3 每張酥皮內劃上空格,空格內填上吉士醬舖上蘋果片
4 蘋果掃上牛油,灑上香料糖,四邊搽上蛋黃
5 放入焗爐,用攝氏185度焗18分鐘即成
(或用氣炸鍋,170度10分鐘)

25g melted butter [fig2]
1 egg yolk

Spice sugar
1tsp cinnamon powder (2.5g) [fig3]
1/4tsp nutmeg powder (0.5g) [fig4]
2tbsp brown sugar (25g) [fig5]

Lemon Custard Sauce
20ml lemon juice
20ml olive oil [fig6]
65g white sugar
10g custard powder [fig7]
1 egg
1 egg yolk

1 Cook the lemon custard sauce in a pot over a low. Cook until the sauce reach75 degrees Celsius. Let it cools down and set aside
2 Peeled and slice the ​​apples
3 Mark a square box in each puff pastry. Fill the box with custard sauce and top with apple slices
4 Coat the apples with butter. Sprinkle with spice sugar. Brush the egg yolk on all sides
5 Put it in the oven, bake at 185 degrees Celsius for 18 minutes and serve
